Braised Carrots and Kohlrabi

This is my favorite kohlrabi recipe. The kohlrabi has a light cabbage taste with a touch of sweetness and the carrots provide color.

Ingredients: serves 2-4, depending on the size of the vegetables

  • 1 -2 carrots, peeled
  • 1 kohlrabi, peeled
  • very small amount of olive oil or butter
  • water

1) Julienne the vegetables, cutting into short sticks about 1/4″ square.

2) Braise the vegetables: using a medium skillet, melt butter or warm the oil then add vegetables. Stir while sautéing for 1-2 minutes then add water  about 1/4″ deep in the pan. Cover, reduce heat, and simmer until tender-crisp, about 4-6 minutes. Check for preferred tenderness.

3) Drain any excess liquid then serve.
